Ingredients
- 1/2 cup fat free sour cream
- 2 ,3 oz. boxes sugar free instant pudding, cheesecake flavored
- 8 oz. fat free cream cheese
- 1 cup Calabro fat free ricotta
- 3/4 cup Splenda, divided
- 1 envelope unflavored gelatin
- 1/2 cup boiling water
- 16 lady fingers
- 1 Weetabix biscuit

Preparation
Step 1
Blend the first four ingredients and 1/2 cup Splenda together with an electric mixer. In a small bowl, mix the gelatin and water until dissolved.
Add to mixture and bet until smooth.
Stand lady fingers around the perimeter of the 6" springform pan.
In a small bowl, crumble the Weetabix and mix with 1/4 cup of Splenda. Sprinkle on bottom of the pan inside the lady fingers.
Carefully pour filling in the pan and smooth out the top. Let it set in the refrigerator for at least 2 hours.
Garnish with an edible flower, if desired.
