Ingredients

  • 1 cup wild rice (measured before cooking)
  • 2 cups diced turkey or chicken (precooked)
  • 2 cans cream of mushroom soup
  • 1/2 cup onion, chopped
  • 1/2 cup celery, chopped
  • 2 cups fresh or frozen broccoli
  • 1 package dry onion soup mix
  • 1 can water chestnuts (diced or chopped)
  • 1/2 teaspoon chicken boullion cube (dissolved in 1 cup hot water)

Preparation

Step 1

Wash and drain wild rice.

Bring rice and 4 cups of water to a boil. Reduce heat. Cover and simmer for 40 minutes. Discard leftover liquid.

Mix rice with meat, cream soups, onion, celery, broccoli, onion soup mix, water chestnuts, and chicken broth.

Place in greased 3 quart casserole and bake covered for 1 hour 15 minutes.

Sprinkle with sliced cashews or almonds before serving.
