Ingredients

  • 2 cups flour
  • 1 cup sugar
  • 1-1/2 teaspoon baking powder
  • 1 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1/4 cup melted butter
  • 1 egg
  • Grated peel of 1 large orange
  • 3/4 cup orange juice*
  • 1-1/2 cup fresh cranberries**
  • 1 to 1 -1/2 cup light raisins
  • 1/2 to 1 cup chopped walnuts.
  • *You will need a little more juice than that of a large orange; Kris has used cranberry/raspberry juice to complete the 3/4 cup also.
  • ** This is roughly 1/2 of a 1 pound package of fresh cranberries.

Preparation

Step 1

Grease one 9x5x3 inch loaf pan or 3 mini loaf pans. Preheat oven to 350 degrees.

Combine dry ingredients in large mixing bowl.

In blender/food processor, chop the butter, egg, orange peel and juice, and cranberries.

Blend cranberry mixture into dry ingredients. Add raisins and walnuts in desired quantities.

Pour into pans.

Bake large loaf pan for about 1 hour 10 minutes; bake 3 mini loaves for 50-55 minutes.

Cool 10 minutes, remove from pans to continue cooling.
