Ingredients

  • 1 pound cream cheese
  • 2 tablespoons mayonnaise
  • 2 tablespoons sour cream
  • 1/2 teaspoon dried dill (or 1 1/2 teaspoon fresh dill; preferred)
  • 10-11 ounce can of pineapple tidbits, drained
  • Bread of your choice
  • Lettuce leaves
  • Tomato slices
  • Approximately 24 ounces bay shrimp
  • Fresh sprigs of parsley for garnish

Preparation

Step 1

Using the white paddle on a KitchenAid (or electric hand mixer), whip softened cream cheese and scrape down sides and whip again. Add mayonnaise, sour cream, and dill and whip again.
Fold in chopped pineapple (low speed) or with a spatula.
Serve as open faced sandwiches; spread a generous amount of the cream cheese mixture on your favorite bread and top with lettuce, tomato slice and bay shrimp. Garnish with parsley.
