Ingredients
- 1 C butter
- 1 1/2 C sugar
- 4 eggs
- 1 C pecans, chopped
- 1 Tbsp vanilla
- 4 C flour
- 1 Tbsp baking powder
- 1/2 tsp salt

Step 1
Beat butter and sugar together until light and fluffy. Add eggs one at a time. Add pecans and vanilla and stir.
In a separate bowl combine flour, baking powder, and salt. Add the flour mix to the liquid and stir until blended.
On a large greased cookie sheet form dough into two equal loaves. Bake @ 325 for 20 min. Lightly brown and slightly cracked top indicate doneness. May need additional 5 min. Remove and cool for 5 min. After cooling, cut at an angle into biscotti slices. Lay each slice on side and bake 10 min on each side. Cool on wire rack.
Dip 1/2 biscotti in melted chocolate… Try almonds and almond extract in place of pecans and vanilla.
