Ingredients
- 2 T cornstarch
- 1 1/2 cloves garlic, crushed
- 2 tsp. chopped, fresh ginger, divided OR 1 tsp. ground ginger, divided
- 1/4 C olive oil, divided
- juice of 1/2 lemon
- 1 small head broccoli
- 1/2 C snow peas
- 3/4 C julienne carrots
- 1/2 C halved green beans
- 4 T soy sauce
- 5 T water
- 1/4 C chopped onion
- beef strips

Preparation
Step 1
In a large bowl, blend cornstarch, garlic, half of the ginger & 4 T oil until cornstarch is dissolved. Mix in lemon juice & veggies. Toss to lightly coat.
heat remaining oil in a large skillet over medium heat. Cook beef strips. Add veggies and cook for 2 minutes, stirring constantly to prevent burning. Stir in soy sauce & water. Mix in onion & remaining ginger. Cook until vegetables are crisp tender.
