Ingredients
- * Vegetable oil cooking spray
- 1/2 * 1/2 vanilla bean, cut lengthwise
- * Juice of 1 lemon
- 2 * 2 ruby red grapefruit, segmented, juice reserved
- 1/2 * 1/2 teaspoon honey
- 1/2 * 1/2 cup plus 1 tablespoon extra-virgin olive oil
- 5 * 5 cups baby arugula
- 4 * 4 salmon fillets (about 4 oz each)

Step 1
Coat grill with cooking spray; heat on high. Scrape vanilla seeds into a bowl. Add juices, honey, salt, pepper and 1/2 cup of the oil. Toss arugula with 3/4 of the dressing. Divide among 4 plates. Grill salmon skin side down 1 minute; turn. Season with salt and pepper; add remaining 1 tbsp oil. Cook until fish is opaque, about 2 minutes. Top each plate with salmon, remaining dressing and grapefruit.
