Ingredients

  • Batter:
  • 1 cup sugar
  • 1 cup flour
  • 3/4 cup milk
  • 2 tsp. baking powder
  • 1/2 tsp. salt
  • Filling:
  • 3 - 4 cups fruit
  • 1 cup sugar
  • 3 Tbsp. cornstarch
  • 1 stick margarine or butter

Preparation

Step 1

Prepare fruit filling by combining sugar, cornstarch and fruit in a saucepan over medium heat. Cook, stirring often to prevent fruit from sticking to pan, as mixture thickens in consistency. When thickened set aside.
Melt 1 stick butter in an 8 or 9-inch baking dish. Mix batter ingredients together. Pour batter into melted butter. Do not stir. Pour fruit filling over batter. If desired, sprinkle cinnamon & nutmeg over the fruit. Bake at 350 degrees F. for 30-40 minutes. Great with some vanilla ice cream!
