Spanish Quinoa

Quinoa is a whole grain that contains more protein than any other grain. It stand alone as a complete protein grain. Quinoa contains no gluten and is easy to digest.

Ingredients
- 1 cup quinoa, rinsed in cool water, placed in a large frying pan and toasted over medium heat. Cook, shaking the pan for around 15 minutes or until the quinoa reaches a golden brown. Cool. Reserve for the rest of the recipe.
- 2 (14 1/2 ounce) cans diced tomatoes
- 2 tablespoons olive oil
- 2 medium onions, diced
- water
- 2 garlic cloves, minced
- 1 cup toasted quinoa (See above)
- 2 teaspoons chili powder
- 1/2 teaspoon sugar
- 2 tablespoons tomato paste

Preparation
Step 1
1. Drain tomatoes and reserve juice.
2. Heat oil and saute garlic and onions until translucent
3. Place the tomato juice in a liquid measuring cup and add enough water to equal 2 cups of liquid.
4. Add the liquid to the sauteed garlic and onions, bring to a boil.
5. Stir in the quinoa.
6. Reduce to simmer, cover and cook for 15 minutes or until the liquid is absorbed.
7. Stir in tomatoes, chili powder, sugar, and tomato paste and cook another 2-4 minutes until hot.
