- 1 LARGE CARTON BEEF STOCK OR BROTH
- 2 CELERY STALKS, SOME LEAVES INCLUDED
- 1 MEDIUM SWEET ONION
- 3 CARROTS
- 2 POTATOES
- 1 12 OUNCE CAN V8 OR TOMATO JUICE
- SALT & PEPPER TO TASTE
- CAN ADD 2 SMALL ZUCCHINI, PEELED, SEEDED AND CHOPPED

Preparation
Step 1
IN LARGE STOCKPOT IN SOME OIL, BROWN BEEF SHANK ON BOTH SIDES UNTIL BROWN
ADD STOCK OR BROTH
DICE VEGETABLES ADDING CELERY & CARROTS FIRST.
SIMMER OVER LOW HEAT FOR THIRTY MINUTES
ADD DICED PEELED POTATO AND CAN OF JUICE
ADD ZUCCHINI IS USING
COOK OVER VERY LOW HEAT UNTIL ALL VEGETABLES ARE VERY SOFT
REMOVE MEAT & BONE
DISCARD BONE AND USE CHOPPED MEAT FOR SOUP MEAT SANDWICHES!!
