  • 1 large whole-grain muffin (approximately 3/4 cup)
  • 1 cup Nonfat Yogurt Cheese (recipe in collection)
  • 1/4 cup all-fruit apricot jam
  • 2 tbsp Amaretto liqueur
  • 1/2 tsp lime zest
  • Ground cinnamon

Step 1

Cut the muffin into 1/2-inch pieces and place 3 to 4 pieces in the bottom of each of 4 (6-ounce) ramekins or glass goblets.

In a small bowl, combine the yogurt cheese, jam, liqueur and lime zest. Mix well. Divide the mixture over the muffin pieces. Tap the ramekin or goblet gently on the counter to smooth and settle the mixture. Cover and chill for at least 30 minutes before serving. Sprinkle with the cinnamon.
