Ingredients

  • 4 large baking potatoes
  • Onion powder (sprinkle)
  • 1/4 tsp baking powder
  • 2 egg whites from Jumbo Eggs
  • Pepper to taste
  • 2-4 TBSPS matzoh meal, just enough to keep mixture together
  • Salt (optional)

Preparation

Step 1

1) Grate potatoes by hand to retain bulbus texture
2) Mix all ingredients in a bowl
3) Cook on cast iron pre-heted skillet in a 500 degree oven. Skillet is placed on bottom shelf and not removed from oven.

4) Spray skillet lightly with Pam. Pan must be exceedingly hot, latkes must sizzle when dropped in pan. Latkes must also be very thin in order to cook properly.
5) Cook 3 minutes on each side.
Serve directly from the oven.
