Ingredients

  • 10 oz bittersweet chocolate
  • 3/4 cup unsalted butter
  • 3 egg whites
  • 5 egg yolks
  • 2 tbsp plus 1/4 cup sugar
  • 1 tsp vanilla extract

Preparation

Step 1

Preheat oven to 300.

Grease a 9" springform pan. Spray with Pam. Then toss sugar around entire pan.

Melt the chocolate and butter over a double boiler. Once melted and allow to cool slightly.

Whip the egg whites with 2 tbsp sugar until at soft peak. Set aside.

Whip the egg yolks and 1/4 cup sugar and vanilla till doubled in size. Add the chocolate and fold into mixture. Fold in the egg whites.

Bake at 300 for 35 minutes. Remove from oven. Will fall immediately. Cool to room temperature and chill before slicing. Allow to come to room temp for serving.
