Ingredients
- 1/2 cup butter, softened
- 1/2 cup peanut butter
- 1/2 cup granulated sugar
- 1/2 cup packed brown sugar
- 1 egg
- 1 teaspoon vanilla
- 1-1/4 cups flour
- 3/4 teaspoon baking soda
- 1/2 teaspoon salt
- 60 peanut butter cup minature candies (unwrapped)

Preparation
Step 1
Heat oven to 375 degrees. In large mixer bowl, cream butter, peanut butter and sugars. Beat in egg and vanilla. Blend in flour, soda and salt. Shape dough into 1-1/4 inch balls. Place in UNGREASED mini muffin cugs. Bake 8 to 10 minutes. Remove from oven and immediately press one peanut butter cup in the center of each cookie.
Cool and refrigerate to set. Apprxoimately 5 dozen cookies.
