Ingredients

  • Thin (soups) 1 tbsp. butter, 1 tbsp. flour, 1/2 tsp. salt
  • 1 cup milk
  • Medium: (basics) 2 tbsp. butter, 2 tbsp. flour, 1/2 tsp salt, 1 cup milk
  • Thick (croquettes) 3-4 tbsp. butter, 3-4 tbsp. flour, 1/2 tsp. salt, 1 cup milk

Step 1

In a heavy saucepan, melt the butter over low heat. Blend in the flour and salt (preferably with a wire whisk) and cook slowly, stirring, until the mixture is smooth and doesn't smell starchy but isn't colored (about 2 minutes). Slowly add the milk (or half and half) and beat vigorously until the mixture is smooth. Bring to a boil and cook over medium heat for 1 minute, stirring constantly.

Yields 1 cup
