Stuffed Pumpkin

This is a great and easy addition to a Thanksgiving dinner.

Ingredients

  • In a bowl combine:
  • Take a pumpkin, a small pie pumpkin works best. Cut off the top and scoop out the “innards” as if you were making a jack-o-lantern.
  • Some apples (about 4 or 5; depending on the size of the pumpkin) cut into small pieces but not peeled. (Try some yellow delicious and some jon-a-golds.)
  • 1/2 About 1/2 cup of walnuts (or pecans)
  • 1/2 About 1/2 cup of craisins.
  • Sprinkle that mixture with about a tablespoon of lemon juice to give it a little zip.
  • In a small bowl combine:
  • 1/2 About 1/2 cup brown sugar depending on the sweetness of the apples you used.
  • 1 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/4 tsp ground allspice

Step 1

Mix the sugar mixture with the fruit and stuff the pumpkin. Put about a tbsp of butter on top and put the lid back on the pumpkin.

Put it in a shallow baking dish (I use a 9 x 13 cake pan) with about an inch of water.  Get some oil on the outside of the pumpkin so it will brown nicely. I just spray it with Pam.

Bake at 350 for about 1 1/2 hr or until the pumpkin is soft.  Before you serve it scrape the inside of the pumpkin with a large spoon so that the pumpkin mixes with the fruit. Be careful not to puncture the outside of the shell.
