Chocolate-Frosted Marshmallow Cookies

Ingredients
- Dough
- 1/2 cup shortening
- 1/2 cup brown sugar
- 1/2 cup granulated sugar
- 1 egg, beaten
- 1-1/2 cups flour
- 1/2 teaspoon baking soda
- 2 squares unsweetened baking chocolate, melted
- 1 teaspoon vanilla
- 1/2 cup milk
- 1/2 cup walnuts, chopped
- 12 large marshmallows, cut in thirds horizontally
- Frosting
- 1-1/2 squares baking chocolate
- 1-1/2 cups powdered sugar
- 1 teaspoon vanilla
- 1/4 cup butter
- 1 egg

Step 1
To make dough: In mixing bowl, cream together shortening, brown sugar and granulated sugar. Add egg. Beat well.
In medium bowl, whisk together flour and baking soda. Add to creamed mixture. Stir in melted chocolate, vanilla and milk. Mix. Add walnuts.
Mix well. Chill dough for 1 hour.
To prepare oven and cookie sheets: Preheat oven to 350 degrees. Grease cookie sheets.
To bake cookies: Drop dough by teaspoonful 2 inches apart onto prepared cookie sheet.
Bake for 15 minutes or until firm in center. Immediately place 1 marshmallow piece on each cookie. Return to oven.
Bake for 2 minutes or until marshmallow is just warm enough to stick to cookie. Cool completely on wire rack.
To make frosting: In top of double boiler, mix chocolate, powdered sugar, vanilla, butter and egg. Heat until melted together and frosting begins to thicken. Using knife, frost cookies so marshmallows are hidden.
