Ingredients

  • 1 pineapple (about 4 pounds)
  • 1 tbsp sugar
  • 1/4 tsp kosher salt
  • 1 tsp whole black peppercorns
  • 1/4 tsp ground ginger
  • 1/8 tsp ground cloves
  • 1/8 tsp ground cinnamon
  • 1/8 tsp ground allspice
  • Juice of 1 lemon
  • 2 cups strawberries

Step 1

Remove the leaves from the pineapple, remove the core, and cut lengthwise into quarters; then cut away the outer peel. Cut 3 pineapple quarters into large chunks, place in a food processor, and puree. Strain the puree through a fine sieve.

Combine the pineapple puree, sugar, salt, peppercorns, spices, and lemon juice in a serving bowl. Slice the remaining pineapple quarter into 1/4-inch thick slices. Clean and stem the strawberries, and cut them in quarters. Add the strawberries to the bowl and refrigerate for at least 2 hours before serving.
