  • 3 cups flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 cup warm water
  • 2 tablespoons melted lard, bacon drippings or shortening.

Step 1

Sift flour, baking powder, and salt into large bowl. Make a well in center and pour in water and melted fat. Mix well, then transfer to work surface and knead into soft dough that is not sticky. If necessary, add a bit of flour to keep dough from sticking to work surface. Form dough into 24 walnut sized balls.

On a floured surface, roll balls into 6 inch circles.

In a very hot UNGREASED skillet or griddle, cook tortillas for a few seconds on each side, until slightly browned.

To store, let tortillas cool completely, place in plastic bag and refrigerated for up to two weeks.

Makes two dozen 6 inch tortillas.
