Ingredients
- 1 stinco di maiale con la cotenna
- 1 orange
- 1 lemon
- 1 bunch of mature white grapes
- salt & pepper
- 1/2 cup olive oil
- 4 tablespoons of vinegar

Step 1
Preheat oven to 200°C
Grate the orange & lemon rind & place the peel in a small bowl. Squeeze the juice from the fruit & add to the peel.
Divide in half the bunch of grapes, take out the seeds & add to the juice/rind mixture. Also add the oil, salt ,pepper & the vinegar and mix well.
In a oven dish place the pork, then pour the marinade over the meat, moving it around so that it is well covered. Cover with plastic wrap and leave to marinate either overnight in the fridge or for at least a couple of hours.
Turn the oven to 200° C and when it is very hot place the pork to cook for 30mins, then lower the temperature to 160° C and let cook for another 90 minutes.
