Ingredients
- 1 1/2 # fingerling potatoes, halved or quartered
- 4 (6oz) tuna fillets or steaks
- 1 # green beans
- 1/4 tsp salt
- 1/8 tsp black pepper
- 6 C mixed salad greens
- 1 (10oz) pkg grape tomatoes, halved
- 1/2 C kalamata olives
- 4 hard cooked eggs, quartered
- 1/2 red onion thinly sliced
- Caper vinaigrette
- 1/4 C red wine vinegar
- 1 1/2 tsp Dijon mustard
- 1 shallot, minced
- 1/2 tsp lemon zest
- 2 Tbs lemon juice
- 1 Tbs capers, chopped
- 1 tsp Worcestershire sauce
- 1/4 tsp salt
- 1/4 tsp black pepper
- 1/2 C extra virgin olive oil

Preparation
Step 1
Cook potatoes on well greased grill grates 12-15 minutes until tender. Toss w/ 2 Tbs vinaigrette. Set aside
Cook beans in salt water 4 min until crisp tender. Rinse w/ cold water, drain. Toss w/ 2 Tbs vinaigrette. Set aside
Sprinkle tuna w/ salt and pepper. Grill 3 minutes/side. cut in 1/4" diagonals
Arrange greens, potatoes, beans, tomatoes, etc on plates. Top w/ tuna. Drizzle w/ remaining vinaigrette.
