Ingredients

  • 1 1/2 # fingerling potatoes, halved or quartered
  • 4 (6oz) tuna fillets or steaks
  • 1 # green beans
  • 1/4 tsp salt
  • 1/8 tsp black pepper
  • 6 C mixed salad greens
  • 1 (10oz) pkg grape tomatoes, halved
  • 1/2 C kalamata olives
  • 4 hard cooked eggs, quartered
  • 1/2 red onion thinly sliced
  • Caper vinaigrette
  • 1/4 C red wine vinegar
  • 1 1/2 tsp Dijon mustard
  • 1 shallot, minced
  • 1/2 tsp lemon zest
  • 2 Tbs lemon juice
  • 1 Tbs capers, chopped
  • 1 tsp Worcestershire sauce
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1/2 C extra virgin olive oil

Preparation

Step 1

Cook potatoes on well greased grill grates 12-15 minutes until tender. Toss w/ 2 Tbs vinaigrette. Set aside

Cook beans in salt water 4 min until crisp tender. Rinse w/ cold water, drain. Toss w/ 2 Tbs vinaigrette. Set aside

Sprinkle tuna w/ salt and pepper. Grill 3 minutes/side. cut in 1/4" diagonals

Arrange greens, potatoes, beans, tomatoes, etc on plates. Top w/ tuna. Drizzle w/ remaining vinaigrette.
