Ingredients

  • 1 kg fish fillets ( coda di rospo,triglie, scorfano, branzino )
  • gr.600 fresh mature tomatoes or chopped tomatoes in a tin
  • 1 glass white wine
  • 2 cloves of garlic
  • 1 bunch of parsley
  • 2 tablespoons of flour
  • olive oil
  • salt & pepper
  • thyme

Preparation

Step 1

In a heavy bottomed saucepan lightly brown the garlic and the choped parsley with about 8 tablespoons of olive oil. Add the fish fillets that have been dipped in the flour. Allow the fillets to turna ovely golden brown colour all over and then add the wine and leave to evaporate. You will then add the tomatoes that have been cut into smal piece. Add salt & pepper and leave to cook for around 20 minutes.
