Ingredients
- 1/2 hare cut into 6-7 smaller pieces
- 1 onion
- 2 garlic cloves
- 1 celery stalk
- 3-4 stalks rosmary
- 2 tbs olive oil
- 4 slices proscuitto with the fat
- I glass of white wine
- 1 cup dried porcini mushrooms
- 1 large tin peeled tomatoes

Preparation
Step 1
Cut the vegetables & proscuitto finely then put into a saucepan with the oil. Cook on low heat for10 mins then add the hare ( lepre ) and brown well, add the glass of white wine and when evaporated add the mushrooms ( soaked first in water for 20 mins to rehydrate) and the tin of tomates.
Cover the saucepan and let cook on a low heat for 2 hours. If, during the cooking, the sauce evaporates too much, you can add a little hot water.
