This delicious dressing is one of my favorites. Use it on any kind of salad, such as mixed greens, pasta salad, cucumber salad, or green bean salad.

Ingredients
- 2 to 3 medium carrots, peeled
- 1 peeled garlic clove
- 1 tbsp nonfat plain yogurt
- 1 tbsp balsamic vinegar
- Juice of 1/2 lemon
- Freshly ground black pepper
- 1 tbsp finely chopped red onion
- 1 tbsp finely chopped celery
- 1 tbsp finely chopped carrot
- 1 tbsp finely chopped green bell pepper
- 1 tbsp finely chopped chives
- 1 tbsp finely choopped cilantro
- 6 fresh basil leaves, chopped

Preparation
Step 1
Put the carrots and garlic through an electric juicer. Pour the mixture into a bowl and whisk in the nonfat yogurt, vinegar, lemon juice, and ground pepper. Add the red onion, celery, chopped carrot, bell pepper, chives, cilantro, and basil. Mix gently and set aside at room temperature for 15 minutes before serving.
