Ingredients

  • 1 1/2 c cooked brown rice
  • 1/2 c finely chopped onion
  • 1/4 c sunflower kernels
  • 1/4 c seasoned bread crumbs
  • 1/2 c shredded carrot
  • 3 T minced fresh parsley
  • 2 T reduced sodium soy sauce
  • 1/2 t dried thyme
  • 1 egg
  • 1 egg white
  • 1 c garbonzo beans or chickpeas, rinsed and drained
  • 1 1/2 t canola oil
  • 6 whole wheat buns, split
  • 6 lettuce leaves
  • 6 tomato slices
  • 6 onion slices

Preparation

Step 1

In a large bowl, combine the first 8 ingredients. In a food processor, combine the egg, egg white and garbanzo beans; cover and process until smooth. Stir into rice mixture. Shape into six patties.

In a non stick skillet coated with Pam, cook patties in oil for 5-6 min on each side or until lightly browned and crisp. Serve with buns, lettuce, onion, and tomato
