Ingredients
- 1/2 lb. Gruyere Cheese, grated
- 1 cup butter (2 sticks) unsalted butter, room temp.
- 1 tsp. cayenne pepper
- 1 tsp. salt
- 2 1/2 cups sifted all purpose flour
- 1 cup chopped walnuts or pecans

Preparation
Step 1
Cream the cheese and butter. Sift together the cayenne pepper, salt, and flour and add, gradually, to butter mixture. Add the nuts, mixing well. Divide the dough in half and shape into logs to 1 1/2 inches in diameter. Wrap well and refrigerate for at least 1 hour.
Preheat oven to 350. Line baking sheets with parchment paper
Cut logs into 1/4 inch slices. Place 1 to 2 inches apart on baking sheets.
Bake for 15 to 20 minutes, until lightly colored. Cool! Store in air tight container.
