Tomato and Basil Pesto

Ingredients
- 1 medium vine-ripened tomato
- 1/2 cup loosely packed basil leaves
- 2 tbsp chopped Italian parsley
- 1/2 tsp minced garlic
- 1 tbsp balsamic vinegar
- 1 tsp lemon juice
- Salt
- Freshly ground black pepper

Step 1
Core the tomato and cut it in half. Grill over very hot coals for only a few minutes to take on some color and flavor. Remove from the grill and set aside to cool.
Place the basil, parsley, and garlic in a food processor. Process until smooth. Add the tomato, vinegar, and lemon juice and process. Season with the salt and pepper to taste.
