Ingredients

  • 3/4 cup diced onion
  • 1/2 cup wild rice
  • 3 sprigs of fresh thyme
  • 1 tsp kosher salt
  • 1/2 tsp freshly cracked black pepper
  • 2 cups water
  • 2 cups apple cider
  • 1/4 cup dry sour cherries
  • 1/4 cup dry currants (or raisins)

Preparation

Step 1

Combine all the ingredients, except the cherries and currants, in a medium-sized heavy-bottomed saucepan and cook slowly, covered, over medium heat for approximately 35 minutes. Add the dried fruit and cook for another 15 minutes, or until the rice is tender but not mushy. Cool, drain off any excess liquid, and serve.

Note: Other dried berries can be substituted for cherries and currants.
