SALMON RUBY RED GRAPEFRUIT SALAD 0 Picture

Ingredients

  • SALAD:
  • 1/2 tsp salt
  • 2 tsp olive oil
  • Combination of arugula and romaine lettuce
  • 2 avocado
  • 1 large ruby red grapefruit sectioned
  • 1 cup snow peas
  • DRESSING:
  • 1/4 cup grapefruit juice
  • 1 tbsp dijon mustard
  • 1 tbsp sugar
  • 1/2 tsp salt
  • 1/4 cup olive oil
  • 2 minced cloves of garlic
  • 1 tbsp dill weed

Preparation

Step 1

Mix lettuce and vegetables in 4 plates.

Mix ingredients for dressing - put in fridge.

Cook salmon.

Put warm cooked salmon on lettuce and veggies. Pour dressing over salad just before serving
