Ingredients
- Gr.300 ricotta cheese ( always try to buy fresh!!)
- 6 tablespoons grated parmesan cheese
- 2 eggs
- salt & pepper
- thyme
- gr. 800 zucchini
- 2 cloves of garlic
- 6 tablespoons olive oil

Step 1
In a saucepan slightly cook the garlic (squashed) with the zucchini that has been cut into little cubes for about 5 minutes on a medium flame. Then salt & add 1 teaspoon of thyme. Let cool.
In a bowl mix the eggs, ricotta, parmesan cheese, salt & pepper.
Reduce the zucchini to a thick cream, unite with the egg/ricotta mixture and mix together well.
Add a pinch of thyme and proceed to make the ravioli!!
