Preparation
Step 1
1. Preheat the oven to 375 degrees
2. In a small saucepan combine 1/3 cup of the chocolate chips and the milk, and let sit over very low heat until the chocolate is melted, 5 to 10 minutes. Stir the chocolate mixture until smooth and blended. Remove the pan from the heat and set aside. (Alternatively, you can melt the chocolate chips with the milk in a microwave at 50% power for 3 minutes.)
3. Meanwhile, in a medium bowl, stir together the flour, cocoa, baking soda and salt. In another medium bowl cream the butter with the sugar until well blended. Beat in the egg until well blended, then blend in the chocolate mixture.
4. Beat in the dry ingredients just until combined, then stir in the remaining chocolate chips.
5. Drop 1/4 cup portions of dough onto an ungreased baking, leaving about 3 inches between them. Gently flatten the dough to form 2-1/2" rounds.
6. Bake the cookies for 10 to 12 minutes, or until the bottoms are lightly browned. If you like them chewy, then undercook them a bit. Let the cookies cool slightly on a rack before serving.
