Ingredients
- Combine:
- 2 pkg. cream cheese, room, te,perature (8 ounces each)
- 1 1/2 cups shredded extra-sharp Cheddar (5 ounces)
- 1 1/2 cups shredded pepper Jack cheese (5 ounces)
- 1/4 cup mayonnaise
- 1 jar sliced pimentos, drained and pressed to remove liquid (7 ounces)
- 1/4 cup sliced scallions
- Salt, pepper, and cayenne pepper to taste
- For Rolling:
- Crushed jalapeno potato chips and scallions, cooked bacon crumbles and chopped toasted pecans

Step 1
Combine cream cheese, Cheddar, pepper Jack, mayonnaise, pimentos, and scallions in a bowl with a mixer on medium speed.
Transfer half of mixture to a food processor; puree until nearly smooth. Stir back into mixture in bowl until combined; season with salt, black pepper, and cayenne. Chill mixture 1 hour to firm.
Divide cheese mixture into 3 even portions. Roll each portion into a ball, wrap in plastic wrap, and refrigerate 4 hours or overnight.
Roll cheese balls in preferred topping to coat, then transfer to a serving platter with crackers, corn chips, or tortilla chips.
