Ingredients

  • DOUGH
  • 1/2 tsp sugar
  • 1/2 c warm water
  • 1 tbsp dry yeast
  • 2 1/4 c flour
  • pinch of salt
  • SAUCE
  • 1 medium onion, chopped fine
  • 3 tbsP olive oil
  • 2 garlic cloves, minced
  • 2 cups canned tomatoes
  • 1 tsp oregano
  • 1 tsp basi
  • 1 tsp thyme
  • 1 tsp savory
  • 1 tbsp sugar
  • 1 bay leaf
  • dash of t=Tabasco sauce
  • 1/4 c red wine
  • Freshly groung pepper, to taste

Step 1

Dissolve sugar in water and sprinkle yeast on top. Let stand in a warm place until yeast is foamy, about five minutes. Beat egg lightly and mix into yeast.

Place flour and salt into a Cuisinart. With machine running, pour yeast mixture into the flour. The dough should be slightly sticky to the touch. Transfer dough to a lightly floured work surface and knead dough for at least 5 and up to 7 minutes, adding enough additional flour, as necessary, to form a smooth and elastic dough that is not sticky. Transfer dough to a lightly oiled pizza pan. Cover with a damp towel and let rise in a warm place until doubled in size, usually at least 1 hour.

Preheat oven to 500° F and if you have one, place a pizza stone on the bottom rack of the oven.

Transfer to the preheated pizza stone and bake until crispy and golden brown, usually 12 to 18 minutes (depending on the toppings and the thickness of the crust). Remove from the oven with a metal peel or spatula and serve immediately.
