Sesame Chicken Satays with Peanut Sauce

Ingredients
- Mix all together in a bowl to make a marinade:
- 1 T sesame oil
- 2 T olive oil
- 1 T red wine vinegar
- 3 T light soy sauce (or regular is fine)
- 1/4 c sesame seeds (sometimes you can buy these in bulk)
- Add to:
- 1 to 1.5 lb. boneless, skinless chicken breasts
- Let soak at least 6 hours or more.
- Serve with the peanut sauce.
- Peanut Sauce
- 3 T Olive oil
- 1/4 t minced garlic
- 2 T fresh, chopped ginger root
- 1/2 c creamy peanut butter
- 1 T red wine vinegar
- 2 T light soy sauce (or regular)
- 1 T sugar
- 1/4 c Warm water or more as needed for the right consistency
- Sesame Peas and Snap Peas
- 3 c frozen peas, thawed
- 8 oz frozen sugar snap peas, thawed
- 1/2 c chopped scallions (the amount can be reduced to taste)
- 2 T sesame seeds
- 2 T light soy sauce (or regular)
- 1 t sugar
- 2 T olive oil
- Salt to taste.
- Combine all ingredients in a bowl and toss well.
- Serve immediately or chill. They are also good warmed up.
