Sesame Chicken Satays with Peanut Sauce 0 Picture

Ingredients

  • Mix all together in a bowl to make a marinade:
  • 1 T sesame oil
  • 2 T olive oil
  • 1 T red wine vinegar
  • 3 T light soy sauce (or regular is fine)
  • 1/4 c sesame seeds (sometimes you can buy these in bulk)
  • Add to:
  • 1 to 1.5 lb. boneless, skinless chicken breasts
  • Let soak at least 6 hours or more.
  • Serve with the peanut sauce.
  • Peanut Sauce
  • 3 T Olive oil
  • 1/4 t minced garlic
  • 2 T fresh, chopped ginger root
  • 1/2 c creamy peanut butter
  • 1 T red wine vinegar
  • 2 T light soy sauce (or regular)
  • 1 T sugar
  • 1/4 c Warm water or more as needed for the right consistency
  • Sesame Peas and Snap Peas
  • 3 c frozen peas, thawed
  • 8 oz frozen sugar snap peas, thawed
  • 1/2 c chopped scallions (the amount can be reduced to taste)
  • 2 T sesame seeds
  • 2 T light soy sauce (or regular)
  • 1 t sugar
  • 2 T olive oil
  • Salt to taste.
  • Combine all ingredients in a bowl and toss well.
  • Serve immediately or chill. They are also good warmed up.
