K's Fantastic Gumbo

Ingredients
- 1/4 cup all-purpose flour
- 1/4 cup canola oil
- 3 celery ribs, chopped
- 1 medium green pepper, chopped
- 1 medium onion, chopped
- 1 large carton (48 ounces), plus 1-1/2 cups chicken broth
- 1 14 oz. can diced tomatoes
- 1 box Tony Chachere's Gumbo Mix
- 3 garlic cloves, minced
- 1 teaspoon pepper
- 1 large bay leaf
- 2 pounds uncooked large Shrimp, peeled
- 8 oz. smoked sausage, diced
- 2 chicken thighs, cut up, browned in olive oil and sprinkled with Creole Seasoning
- 12 oz. frozen Cod, thawed and cut into pieces
- 8 oz. lump Crabmeat
- 1 package (16 ounces) frozen sliced okra, thawed

Step 1
•In a Dutch oven mix oil and flour and stir well. Bake at 360 degrees for 1- 1-1/4 hours until caramel colored, stirring twice. Remove to stove on medium heat. Add the celery, green pepper, garlic and onion and smoked sausage; cook and stir for 5-6 minutes or until tender. Stir in the broth, diced tomatoes, pepper, bay leaf and Gumbo Mix; bring to a boil. Reduce heat; cover and simmer for 2 hrs.
•Stir in the shrimp, okra, crabmeat, cod and chicken. Cover and simmer for 10-15 minutes or until shrimp turn pink. Yield: 11 servings. Serve with Cornbread. DELICIOUS!
