Ingredients

  • 1 kg branzino
  • rosemary, salt & pepper
  • lemon
  • gr.250 ricotta
  • 2 eggs
  • 3 tbsp parmesan

Preparation

Step 1

Wash the fish well,and put inside the cavity, a slice of lemon, a sprig of rosemary , salt & pepper and cook for 30 mins (you can also make an 'Oven Baked Branzino' like this!)

In a bowl, mix together the ricotta, egg and the parmesan.

When the fish is cooked, remove all of the bones and skin and mix into the ricotta mixture, mixing evenly, and adding salt & pepper.
