Ingredients

  • Vegetable oil Spray
  • 4 boneless skinless chicken Breast halves
  • 1/2 medium lime
  • 1 tsp ground cumin
  • 1/2 medium green bell pepper, finely chopped
  • 1/4 large onion, finely chopped
  • 1 small tomato, chopped
  • 2 Tablespoons fresh cilantro
  • 1/4 tsp of salt
  • 1/2 medium lime
  • 1/4 cup sour cream

Preparation

Step 1

1. Preheat the oven to 350 degree
2. Lightly spray an 11 x 7x 2 inch baking pan with vegetable oil spray. Place the chicken in a single layer in the pan. Squeeze the juice of 1/2 lime over the chicken. Sprinkle with the cumin. Top with bell pepper and onion.
3. Bake for 28 to 30 minutes, or until no longer pink in the center. Using a slotted spatula, transfer the chicken to plates.
4. Stir the tomato, cilantro, and salt into the pan residue. Squeeze the juice from the remaining 1/2 lime into the pan. Stir well.
5. To serve, spoon the tomato mixture over the chicken. Top with dollops of the sour cream.
