Ingredients

  • 2 lbs. zucchini
  • 1 med. onion
  • 4 Tbsp. cooking oil
  • 1 can or 4 tomatoes, peeled seeded and quartered
  • 1 green pepper
  • 1 clove garlic
  • salt and pepper
  • 1 teasp. parsley

Step 1


Cut zucchini into cubes. Saute onion,sliced, 4 Tbsp. oil until golden. Add tomatoes, green pepper finely cut and garlic chopped fine. Season to taste with salt and pepper Cook 15 mins. over low flame. Add zucchini. Cover and simmer until zucchini is tender. Sprinkle with parfsley and grated cheese.
