Ingredients

  • 2 pounds baking potatoes, scrubbed but not peeled
  • 1/2 cup nonfat milk
  • 1 cup Nonfat Yogurt Cheese (recipe in collection)
  • 3 tbsp butter substitute
  • 1 tsp fine sea salt (optional)
  • 1 tsp Hungarian paprika
  • 1/2 tsp freshly ground white pepper

Preparation

Step 1

Bring a large pan of water to a boil. Cut potatoes into large pieces and cook in the water about 30 minutes or until tender. Drain the potatoes. Use a potato ricer or sieve and return them to the saucepan. Or mash them in the saucepan.

Add the remaining ingredients and mash or beat the potatoes until smooth and well mixed. Taste and correct seasoning. Reheat when ready to serve.
