HAM-Ham and Pineapple Skewers Glazed with Coffee

19/04/14 - Easter - Very good. I found it a bit dry but Dan loved. Glaze was great. Try on the grill rather than under the broiler and use fresh pineapple if at all possible.

Ingredients
- 1 fully cooked ham steak (about 1 1/2 - 2 pounds), trimmed and cut into 1" cubes
- 1 can pineapple chunks, drained, juice reserved
- 1/2 tablespoon instant espresso powder
- 1 tbsp. Dijon mustard
- 3 tbsp. hot water
- 3 tbsp. Pineapple juice
- 1/4 cup firmly packed brown sugar
- 1/4 teaspoon grated fresh ginger
- 1/4 teaspoon ground cinnamon
- 1/4 teaspoon ground allspice
- 1/2 teaspoon Ancho chili powder

Preparation
Step 1
In a small bowl, dissolve espresso in hot water. Add remaining ingredients and stir well. Let cool to room temperature. Add to a ziplock bag with cubed ham and Pineapple chunks. Refrigerate and marinate several hours or overnight.
Preheat broiler. Drain ham and Pineapple, reserving marinade.
Thread ham and Pineapple alternately on soaked skewers. Broil, basting occasionally, until golden and heated through.
Warm remaining marinade and serve on the side.
