Ingredients

  • 2 1/2 Fryer Chicken cut up
  • 1/4 cup olive oil
  • 8 slices onion, 1/8 inch thick
  • 4 medium tomatoes cut up
  • 1 1/2 cups uncooked rice
  • 3 cups chicken broth
  • 2 Tbsp. paprika
  • 2 Tbsp. salt, 1/2 teasp. pepper
  • 1/4 teasp. cayenne or crushed red pepper
  • 1/8 teasp. saffron
  • 1 3/4 lbs. shrimp
  • 1 lb. fish fillets, cubed
  • lobster tails, 5oz. cut up
  • 1 10oz. pkg. frozen peas
  • 1 15oz. can artichoke hearts
  • 1 4oz. jar pimientos drained
  • Clams if desired, sausage and green pepper

Step 1



Brown chicken in oil and pour off fat.
Add onion, tomatos and stir 5 mins.
Stir in rice, broth and next 5 ingredients.
Add chicken, cover and simmer 20 mins.
Gently stir in fish and peas. Cover and simmer 15 mins.
Carefully stir in artichokes and pimientos
