Ingredients
- 2 1/2 Fryer Chicken cut up
- 1/4 cup olive oil
- 8 slices onion, 1/8 inch thick
- 4 medium tomatoes cut up
- 1 1/2 cups uncooked rice
- 3 cups chicken broth
- 2 Tbsp. paprika
- 2 Tbsp. salt, 1/2 teasp. pepper
- 1/4 teasp. cayenne or crushed red pepper
- 1/8 teasp. saffron
- 1 3/4 lbs. shrimp
- 1 lb. fish fillets, cubed
- lobster tails, 5oz. cut up
- 1 10oz. pkg. frozen peas
- 1 15oz. can artichoke hearts
- 1 4oz. jar pimientos drained
- Clams if desired, sausage and green pepper

Preparation
Step 1
Brown chicken in oil and pour off fat.
Add onion, tomatos and stir 5 mins.
Stir in rice, broth and next 5 ingredients.
Add chicken, cover and simmer 20 mins.
Gently stir in fish and peas. Cover and simmer 15 mins.
Carefully stir in artichokes and pimientos
