Ingredients
- 4 lemons
- 2 1/2 lb red-skinned new potatoes, halved
- 6 cloves garlic
- 1/2 cup kosher salt, plus more for seasoning
- 3 Tbsp extra-virgin olive oil
- 2 Tbsp chopped fresh parsley
- Freshly ground pepper

Step 1
Finely grate zest from 3 lemons into a bowl; press juice from all 4 lemons into a separate bowl. Put potatoes in a pot with lemon juice, garlic, and salt and cover with water by 1 inch. Bring to a boil, then reduce heat to medium-low and cook until just tender, 12 minutes. Drain, transfer to a bowl, and discard garlic cloves.
Gently toss with olive oil, grated lemon zest, and parsley. Season with salt and pepper.
