Wake up an ordinary brunch or dinner with an eggstra-ordinary twist on a holiday classic. Light mayonnaise and less yolk make these extra healthy, while flavorful jalapeno peppers add a delightful devilish kick.

Ingredients

  • 6 hard-cooked eggs, peeled, cut in half
  • 1/4 cup light mayonnaise
  • 1/2 teaspoon Dijon mustard
  • 9-12 jarred jalapeno slices plus 1/2 teaspoon juice
  • Salt and black pepper to taste
  • Finely chopped cilantro, optional

Step 1

In a small bowl, mash 1/2 of the egg yolks with a fork (discard the remaining yolks). Add the mayonnaise and mustard and mix until smooth.

Using a knife, finely mince the jalapeno slices, until almost mashed (for more kick, use 12 slices -- you should have between 2 and 3 teaspoons of finely chopped jalapeno). Stir the jalapeno into the yolk mixture. Taste, and add salt, pepper or more jalapeno to taste.

Fill the whites evenly with the mixture. Garnish with cilantro if desired.
