I had this at a work event and it was great. Not too heavy, but very good chocolate flavor.

Ingredients

  • Crust:
  • 1 lb. cream cheese
  • 2/3 cup sugar
  • 1 tsp vanilla extract
  • 1 Tbsp cocoa
  • 3 eggs
  • 2 cups sour cream
  • 8 oz chocolate, finely chopped (I used bittersweet chocolate)
  • 1/3 cup boiling water
  • 1 3/4 cups graham crackers
  • 1/4 cup sugar
  • 1/4 cup cocoa
  • 6 Tbsp butter, melted

Step 1

Note: when mixing ingredients, scrape the sides and bottom of the mixing bowl frequently with a rubber spatula.

Have all ingredients at room temperature (except the boiling water, of course). Preheat the oven to 350°F.

Beat the cream cheese until smooth.
Add the vanilla and cocoa and gradually beat in the sugar.
Beat in the eggs, one at a time.
Gradually beat in the sour cream.
Add the boiling water to the chocolate and stir until melted. (Microwave briefly if not completely melted.)
Add the chocolate to the batter and mix well.

Mix the graham crackers, sugar, and cocoa and then mix in the melted butter. Press mixture into the bottom of a 9-inch springform pan and bake for 10 minutes. Allow to cool.

Place a pan of water on the bottom rack of the oven to keep the air moist. Pour the batter into the pan and bake for 35-40 minutes, until the sides are set and the center jiggles slightly when the pan is nudged. Turn off the oven and prop the door open slightly (e.g. with a wooden spoon handle). Allow the cheesecake to cool in the oven for 1 hour. Remove from oven and allow to cool completely before refrigerating.
