Ingredients

  • 10 ounces extra-firm tofu
  • 1/2 cup roughly chopped onion
  • 1/4 cup lime juice
  • 1 jalapeno pepper, roughly chopped
  • 3 cups fresh pears (approximately 1 1/2 pounds), peeled, seeded, and cut in 1/2-inch dice
  • 1/4 cup chopped fresh mint
  • 1/2 tsp salt

Step 1

In a blender or food processor, combine the tofu, onion, lime juice, and minced jalapeno. Process until very smooth and then transfer to a large bowl. Add the pears, mint, and salt. Gently toss to combine thoroughly. Cover with plastic wrap and refrigerate for at least 1 hour. Serve chilled or at room temperature.
