Ingredients

  • 10 cups veg broth
  • 6 (1 inch) pieces lemongrass, white part only, crushed.=
  • 3 garlic clove, crushed
  • 8 dried Thai or other chiles, split lengthwise....***Watch if using Habernos...use 2 MAX
  • 1 red bell pepper, cut into thin strips
  • 2 cups sliced mushrooms
  • 6 scallions, chopped
  • 15-20 large prawns, shelled with tail on
  • 4 tbsp Vegan "fish" sauce or soy sauce
  • 2 tbsp fresh lime juice
  • 1/2 cup fresh cilentro, coarsely chopped
  • a couple of handfuls of Bean sprouts

Preparation

Step 1

In a saucepan, combine the broth, lemongrass, garlic and chiles. Bring to a boil, cover, reduce the heat, and simmer for 30 min.
Strain the mixture through a sieve, discard the solids and return the liquid to a saucepan.
Add the bell pepper, mushrooms and scallions, and bring to a boil.
Cook for 8 min, add the prawns and cook for 2 minutes then reduce the heat to a simmer and add the soy or fish sauce, lime juice and bean sprouts.
Stir gently and simmer 3 minutes to heat through. Taste and adjust the seasoning.
Garnish with cilentro and serve hot.
