Ingredients
- 1 10 oz package frozen microwaveable brown rice
- 4 1/2 teaspoons olive oil, divided
- 1 1/2 cups chopped onion
- 1 1/2 cups red bell pepper
- 2 Tablespoons 40% less sodium taco season

Preparation
Step 1
1. Prepare rice according to package directions.
2. Heat a large nonstic skillet oer medium high heat coat pan with cooking psray. Add 1 teaspoon oil to pan. Add onion and bell papper. saute 10 minutes or until tender an dlightly brown.
3. Add taco seasoning adn remaining 3 1/2 teaspoons oil to pan. cook 30 seconds over medium high heat. Add rice, cook 1 minutes, stirring constantly.
Yield 6 servings of 1/2 cup each
