Ingredients

  • 1 cup wheat flour
  • 1/3 cup rice flower
  • 5 egg yolks
  • 2 cups milk, approximately
  • 1/2 pound Swiss cheese, cut into tiny dice
  • 1/2 pound Parmesan cheese, cut into tiny dice
  • 1/2 cup softened butter
  • 1 teaspoon salt
  • freshly ground white pepper
  • pinch of grated nutmeg
  • 2 cups fresh white bread crumbs
  • 1 cup grated Swiss cheese
  • fat for deep frying

Step 1

In a large bowl mix together the wheat flour, rice flour, two of the egg yolks, and the milk.

Beat in the Swiss cheese, the Parmesan and the butter. Season with the salt, a little pepper and a pinch of nutmeg.

Butter a heavy saucepan and pour the cheese mixture into it. Cook over lowest possible heat, stirring constantly, until the mixture is thickened and smooth and cheese has melted.

Oil a shallow baking dish or a jelly-roll pan and pour the mixture in it evenly, smoothing it with the blade of a knife or a spatula. Cool completely. Beat the remaining 3 egg yolks. Cut the dough into diamond shapes. Dip these into the beaten egg yolks and then into the bread crumbs mixed with the grated Swiss cheese.

Heat the frying fat to 375°F. on a frying thermometer and fry the fritters until they are golden. Drain them on kitchen toweling, and serve them in a hot serving dish lined with a napkin. Serve immediately.
