Herbed Chicken in Foil Packages

Ingredients
- 4 boneless, skinless chicken breast halves, rinsed and patted dry
- 4 (1/2-inch thick) onion slices, divided
- 4 (1/4- to 1/2-inch thick) bell pepper slices, divided
- 1 rib celery or to taste, coarsely chopped, divided
- Very light sprinkle of dried basil, tarragon or your favorite dried herb
- Pepper if desired
- 3 or 4 tbls. butter, melted in microwave
- 1/4 cup fresh lemon juice
- 3 tbls. chopped fresh parsley, divided

Preparation
Step 1
1. Cut 4 (12-inch) squares of foil. Set aside. Preheat oven to 375 degrees.
2. Center 1 piece of foil in shallow plate or bowl. Lightly spray center with nonstick coating. Place chicken breast in center, top with onion slice, bell pepper and ¼ of celery. Sprinkle very lightly with dried basil or herb of your choice and pepper to taste.
3. In separate bowl, mix melted butter and lemon juice together. Spoon ¼ of the mixture over the chicken. Top with sprinkle of fresh parsley.
4. Carefully fold and seal foil over chicken, being careful not to let the lemon butter seep out. Seal carefully so that the chicken will steam in the herbs. Place in shallow baking dish or pan. Repeat with other three chicken breast halves.
5. Bake for 30-40 minutes or until chicken is tender and cooked through. Carefully unwrap and place on dinner plate.
